Spare Rib Chops in BBQ Sauce

Spare Rib Chops are a cheaper chop than most and lend themselves to slow cooking perfectly


1 spare rib chop per person

4oz tomato ketchup

2 tbspns dark soft brown sugar

2 tbspns Worcestershire Sauce

1 tbsn cider vinegar

A dash of Tabasco ( as much or as little as you like

1-2 minced garlic cloves

1/4 tspn mustard powder

1/4 tspn salt

1 onion sliced

A handful of corn kernels


1Lay the chops in a tray

2Mix the ketchup, sugar, sauces , vinegar garlic , mustard powder and salt in a saucepan over a medium heat . Simmer until sugar is melted

3Put onion and corn in the dish with the chops

4When it's cooled poor over the sauce . Put in fridge to marinate for an hour or so , turning the meat occasionally

5Heat oven to 160C

6Put chops in heated oven and cook covered in foil for about 2 hrs

7Serve with roasted vegetable cous cous or mashed potatoes
