Spare Rib Chops in BBQ Sauce

Spare Rib Chops are a cheaper chop than most and lend themselves to slow cooking perfectly

Yields1 Serving
 1 spare rib chop per person
 4oz tomato ketchup
 2 tbspns dark soft brown sugar
 2 tbspns Worcestershire Sauce
 1 tbsn cider vinegar
 A dash of Tabasco ( as much or as little as you like )
 1-2 minced garlic cloves
 1/4 tspn mustard powder
 1/4 tspn salt
 1 onion sliced
 A handful of corn kernels

Lay the chops in a tray

Mix the ketchup, sugar, sauces , vinegar garlic , mustard powder and salt in a saucepan over a medium heat . Simmer until sugar is melted

Put onion and corn in the dish with the chops

When it's cooled poor over the sauce . Put in fridge to marinate for an hour or so , turning the meat occasionally

Heat oven to 160C

Put chops in heated oven and cook covered in foil for about 2 hrs

Serve with roasted vegetable cous cous or mashed potatoes
