Spare Rib Pork Chops

Spare Rib Pork Chops in a bbq sauce with roasted vegetable cous cous or roast potatoes and corn.
Spare rib chops are so tasty and very reasonably priced . I made up a double batch of the BBQ sauce

Ingredients

1Heat oven to 140C

2put in the oven turn them after an hour

3Cook for 2-3 hrs ( they are fab done in the SC for about 8hrs

4Peel and part boil your potatoes, drain and shake

5increase oven to 210C put in a roasting pan and spray with canola oil and put on top shelf

6Take whatever veg you have I used half a green pepper, half a yellow pepper, a red chill, de seeded and half an onion ( essentially fridge gravel ) sprinkled on a few picked thyme leaves , some salt and pepper and again sprayed with oil Put them in the oven until cooked

7For 2 people I used 100g cous cous and poured on 125ml stock then covered the basin with cling film and left to absorb

8When the vegetables are cooked remove from oven chop and mix into the cous cous add more seasoning if needed

9When potatoes are cooked serve the chops with potatoes and chosen veg or vegetable cous cous
