7oz SR flour

4oz suet

5 oz currants or raisins

2.5 oz caster sugar

2-3 tblspns mixed spice

Zest of a lemon

120ml milk


1Mix all dry ingredients in a large bowl

2Stir in the milk to form a firm dough ( you may need a little extra )

3Turn dough onto a floured surface and shape into a fat sausage

4Place it onto a large piece of greaseproof that has a pleat in it to allow for expansion

5Roll it up to cover it and tie the ends with string like a Christmas cracker

6Put over a steamer and steam for 2-2.5 hours

7Be careful when unwrapping and serve with real custard

8Can be cooked in a pressure cooker for about 35 minutes or baked in an oven for about 2.5 hrs at 180C
