Sticky Ginger Cake

A warm spicy sticky cake


200g SR Flour

200g Sugar

2-3tspn Ground Ginger

1 tspn Bocarbonate of Soda

2oz butter or margarine

1 beaten egg

3 tbspn golden syrup

240ml hot water ( from the tap)

2 -3 pieces stem ginger , chopped and a little of the syrup


1Heat oven to 180C

2Grease and line a 7" baking tin

3Mix the dry ingredients in a bowl

4Rub the butter into the mix so it resembles breadcrumbs

5Stir in the egg, syrup and hot water using a wooden spoon

6Stir in the ginger and a little syrup

7Pour the mix ( it will look like batter ) into the prepared baking tin

8Bake for 35-40 minutes

9Allow to cool in the tin

10When cool cut into squares

11Can be served warm with custard as a dessert or cold as a cake
