Strawberry and Almond Sponge

Serve warm as a dessert

4 tablespoons) melted butter plus more for greasing the pan

1 cup sugar

1 large egg

1/2 teaspoon almond extract

1/2 cup milk

2 cups Plain flour

1 tspn baking powder

1 tspn salt

1 punnet strawberries, hulled and quartered


1Preheat the oven to 180c

2Grease a 9-inch baking dish

3Put the butter and sugar into a large bowl and cream it together

4 Add the egg and almond extract and stir into the mix

5Pour in the milk and stir

6 Then add in the flour, baking powder and salt and mix until fully combined. Pour the batter into the greased dish. Scatter the strawberries on top and gently push them down into the batter.

7Bake until golden for about 35 minutes.

That looks good! I all except almond extract in the house, but I have 50g of blanched almonds – do you think they might work if I ground them up?
