Strawberry Shortcake

8oz SR flour

2oz sugar plus extra to sprinkle ( granulated caster use what you have )

2oz butter

1oz double cream plus extra for glazing

4oz milk

Fresh strawberries

A little sugar

Double cream

Vanilla extract


1Heat oven to 220c

2Line a baking tray

3Put the flour and sugar in a large bowl and mix

4Put the butter in a saucepan and melt , you want to let it go a golden brown but not burnt , so keep watching

5Pour the butter, milk and cream into the flour and sugar

6Mix to bring it to a dough

7Tip onto a floured board and pat it into a rectangle about 1" deep

8Cut into 8 and put them on a baking tray

9Brush the tops with a little cream and then sprinkle with sugar

10Bake for 15-18 minutes until golden brown

11Allow to cool

12Hull and cut the strawberries, put in s bowl and sprinkle with some sugar

13Cover and put in the fridge for at least an hour

14Whip the cream with a little vanilla extract

15To assemble , split the shortcake , top with strawberries and cream, put the top on garnish with a little mint and serve
