Sweet and spicy chilli chicken

A tasty quick colourful stir fry

  • Yields: 4 servings


2 chicken breasts

1/2 red pepper

1/2 yello pepper

1/2 green pepper

Potato starch or corn flour

Sauce 1:

1 egg

1-2 tblspn siracha

1-2tspn grated ginger

4tspns mirin

2 tblspn soy sauce

1/2 tspn salt

Sauce 2:

6 tblspn sweet chili sauce

2 tspn lemon juice

4 tspns mayonnaise


1Slice chicken on the diagonal.

2Mix together the ingredients for sauce 1.

3Marinate the chicken in the sauce for at least 30 minutes.

4Cut peppers into bite-sized pieces. Mixtogether with ingredients from sauce 2 and set aside.

5Coat the marinated chicken with potato starch or cornflour

6Fry the chicken in oil until done.

7Then add the peppers and stir-fry for 1-2 minutes.

8Finally, add in sauce 2 and cook until it starts to thicken. Serve immediately.

This is delicious served with egg fried rice.
