Sweet chilli sauce

350g red chillies

375g caster sugar

2 garlic cloves

400ml white wine vinegar


1Put 100g of chillies , the garlic cloves and 250ml of white wine vinegar into a food processor and pulse until smooth

2Add the rest of the chillies and pulse again

3Put into a saucepan and add the rest of the vinegar and all of the sugar

4Stir on a low heat for 5 minutes

5Increase the heat and bring to the boil

6Simmer for 35-40 minutes, stirring occasionally

7Leave to cool in the pan for 10 minutes then decant into sterilised jar or bottle

8Use as required

9Keeps for ages in the fridge
