Toad In The Hole

I fail miserably at the 1:1:1 method . This is my failsafe


1 or 2 sausages per person

400g plain flour

Pinch of salt

2 large eggs

500ml milk or milk and water mixed

A little veg oil


1Put flour and salt into a large bowl

2Crack in the eggs and beat

3Gradually whisk in the milk

4Put in the fridge to rest ( ideally overnight )

5Heat oven to 200C

6Put the sausages into the oven

7Take batter from fridge and whisk

8When the sausages are browning add more oil to pan if needed

9When the oil is smoking by hot add your batter. It should start to sizzle immediately. Return to the oven

10After 10 minutes OPEN the oven door just long enough for the steam to escape . Shut the door

11Continue to cook until the batter is risen and golden , about 20-30 minutes

12Serve with onion gravy and vegetables
