Tuna melt

Top bread, bagels or crumpets

Ingredients

Can of drained tuna

Tblspn mayo

Tblspn ketchup

Squeeze of lemon juice

Pinch of chilli flakes or a squeeze of chilli sauce

1 chopped red onion

0.5 red pepper chopped

Small amount of sweetcorn

4oz grated cheese

Finely sliced tomatoes

Toasted bread or a toasted bagel or a toasted crumpet

Directions

1Heat grill to high

2Mix together the mayonnaise, ketchup , lemon juice and chilli.

3Put the tuna , onion , pepper and sweetcorn in a bowl

4Stir well to combine

5Add the mayonnaise dressing and mix well

6Put this on the toast, bagel or crumpet

7Sprinkle over most of the cheese

8Add the tomatoes and top with the remaining cheese

9Put under the grill until golden and bubbling

10Serve

Oh I just make mine with tuna mayo (maybe some chives if I have them handy) then cover with cheese and melt, never thought of dressing the tuna… have to try this!
