Chicken Kiev is a deliciously retro dish which sees flattened chicken breasts breadcrumbed then fried, and finished off in the oven to give a crunchy outer crust but with an oozing core of garlic butter in the centre. Chop garlic cloves and add to softened butter along with parsley.Mix well and refrigerate for 15 mns to firm.
Cut a small pouch in the thickest part chicken breast
Add garlic butter into pouch and close over.
Dip into flour.egg and breadcrumbs
Fry in oil for 3-4 mns and turn gently till both sides are golden
Transfer to oven and bake for 15mns 180'
Serve with Cauliflower and brocoli mash and beetroot salad. Seriously yummy.
