A great midweek dinner
Place the ribs in a deep dish and season with S&P
For the marinade- Mix all other ingredients and warm in a pot until sugar has dissolved then using 1/3 of the mix baste the ribs on both sides
Allow the ribs to marinate for at least 30mns
Baste with more marinade, cover with foil then place in the oven
Cook for 2 hrs at 140°
Take out the oven,remove foil and baste both sides with remaining marinade
Put back in oven uncovered and bake for a further 20mns at 200° turning over after 10mns and basting again
Serve with wedges and corn on the cob
Tip-can be done in the slow cooker for 6hrs on low before finishing off in the oven
Tip- will work for bone in ribs too
Tip- add 2 tbsp of dark rum or bourbon for extra depth of flavour
