Fish in Garlic butter

Full of flavour and crispy deliciousness

 400 g White fish
 1 tsp Paprika
 ½ tsp Taco seasoning
 ½ tsp Salt
 ½ tsp Pepper
 3 tbsp flour
 4 tbsp Butter
 3 Garlic cloves chopped
 1 Handful of chives chopped
 1 tsp Dill
 1 tbsp Lemon juice
 1 tbsp Oil
 160 g Baby Spinach

Cut the fish into pieces

Mix the Paprika, Taco seasoning,Salt & Pepper together

Coat the fish in the seasoning,making sure to coat both sides

Season the flour with a little S&P, mix through then coat the fish with it

Heat the oil in a pan on a low/medium heat and fry the fish gently for 2-3 mns each side till crisp and golden in colour. You may want to do them in batches

Remove from the pan with a flat turner and drain on a piece of kitchen paper

Melt the butter on a low heat and add the garlic,chives,dill & lemon juice

In another pan add the spinach

pour over half the garlic butter and cook for 2 -3 mns until wilted

Remove from the heat

Place the fish in the remaining butter and toss gently till coated

Serve the spinach on top of a bed of crushed potatoes, place the fish on top and drizzle over any remaining butter sauce

Serve with pasta or rice instead of potatoes.
Swap the taco seasoning for cayenne pepper or chilli powder or omit if you dont like it.
