Grilled kofta (or kefta) kebabs are skewers of ground beef and lamb mixed with fresh parsley, onions, garlic and warming spices. They are great for lunches, picnics or a Fakeaway dinnertime feast accompanied by homemade flatbreads (recipe on the website), salad, tzatziki or your own favourite dressing. I've paired it back a little as I didn't have all the spices available but you can add more if you prefer as its very versatile. You can tailor this recipe to suit you and your families tastes adding or substituting whatever meat,herbs or spices you like. Prep:-
Soak the skewers for 30-45mns.
Grate the Onion and squeeze out any liquid.
Finely chop the Parsley.
Add the mince to a bowl and use a fork to blend together
Add the onion parsley,spices,s&p and breadcrumbs
Remember the Paprika as I nearly forgot lol
Mix everything together. Wear a pair of gloves for the next bit so your hands don't get stained.
Divide the mix into portions and roll into a sausage shape
Take a portion and add a skewer into the middle and mold the meat round it to form a sausage
leave 2" of the skewer visible to enable you to hold the ends.
Repeat till all the meat is used. Try not to make them too thick so they cook evenly.
Place in the Halogen oven at 175°for 15mns
Turn over and cook for a further 10mns or until fully cooked
Remove from the oven and drizzle with sweet chilli sauce
Serve warm with salad,flatbreads and a yoghurt and mint dressing
(I've left the skewers in just for the pic)
The preparation for this recipe can be done in the food processor blitzing the meat and spices together to form a finer mixture and save time and effort.
This mix can be made into burgers, meatballs or sausages if you done have skewers
This can be done in a conventional oven, on a grill plate, under the grill or on a bbq. Adjust the cooking times slightly if needed.
The kebabs can also be made ahead of time and kept in the fridge overnight till ready to be cooked
Easy swaps:- Lamb mince for all beef.
Parsley for Coriander
Chilli flakes for 1/2 tsp of paste.
Garlic paste for garlic cloves
