Minestrone Soup -sort of
Ingredients
1 Large onion diced
4 Carrots diced
4 Celery sticks chopped
1 Carton passata
1 Tin canellini beans
1 Tin chopped tomatoes
2 Bay leaves
2 tsp Dried basil
Salt
Pepper
2 tbsp Tomato purée
Frylight or oil
1.50 pt Veg stock
2 Garlic cloves thinly sliced
0.50 Bag kale , stems removed
Broken spaghetti or small pasta shapes
Directions
Spray a pan or your pressure cooker inner pot with frylight or add a touch up f oil
When hot add in the onions , carrots and celery. Cook for a few minutes
Add in the garlic and cook for 2 more minutes
Now add the tomato purée and cook for another minute
Add in everything else . Stir . Put on the pressure cooker lid . Seal the vent and cook on soup for 8 minutes
Or let it simmer for 15-20 minutes
If pressure cooking let it NPR
Serve . Add freshly grated Parmesan to the top if liked
