Rafa Cake Bars
Ingredients
50 g Caster sugar
2 Eggs
50 g Plain flour
1 Packet raspberry jelly
1 tbsp Raspberry jam
200 g Dark chocolate
Directions
Heat oven to 180c
Put a pan of water on the hob and bring to a simmer . Add the eggs and sugar to a bowl sat over the simmering pan and whisk together for 5 minutes until the mix is light , fluffy and well combined
Remove from heat and add in the sieved flour , beating well to incorporate so you have a nice batter
Pour into a greased and lined 7” square pan
Bake for 10-12 minutes until they’re a light golden brown
Cool in the tin
Make the jelly using half the liquid recommended and pot into another square tin and let it set .
When set spread the jam over the sponge . Tip the jelly on top
Met the chocolate when it’s cooled slightly pot over the jelly
Once set cut the cake into bars and enjoy
