Chinese pancakes
Ingredients
150 g Plain flour
Pinch salt
125 ml Boiling water
A little rapeseed oil
Directions
Mix the salt into the flour
Add in the boiling water and mix until you get a dough
When it is cool enough to handle knead the dough until it’s smooth and elastic . This will take 5 -10 minutes
Divide into 10 balls . Roll out as thinly as you can
Brush a hot pan with rapeseed oil and fry the pancakes for 20-30 seconds in each side
Serve with crispy duck , cucumber batons , shredded spring onions and hoisin or plum sauce
