Crispy Duck
Ingredients
1 Duck
Salt
Pepper
1 tbsp Honey
2 tsp Five spice
Directions
Heat oven to 170c
Cut off the flap of fat by the cavity ( you can render this down for roast potatoes )
Sit the duck on a rack in a roasting pan . Pat dry with kitchen towel .
Carefully score the fat all over try not to cut through to the flesh
Put in the oven and cook for 3 hrs
Remove the duck from the oven . Pour off the fat and store it
Season the duck with salt and pepper . Spread the honey over the duck then sprinkle over the five spice
Put it back in the oven for another 30 minutes
Remove from the oven . Allow to rest and then shred the duck . Serve in pancakes with hoisin or plum sauce , cucumber strips and shredded spring onions
