00Mediterranean TraybakeThis recipe was cobbled together by what I found in the reduced section of the supermarket- a packet of sausages, and a mixed veg medley(pepper, onion,butternut squash, courgette) I added some spices, potatoes ( Farmfoods have a bag of frozen chopped potatoes that are perfect for this) some cooked bacon,and a bit more veg and had a tasty filling meal in no time. We love to hear your feedback x00Slow Cooked Courgette SoupWhat to do if you have a glut of Courgettes? Make some soup is the easy answer. Its light, full of nutrients, low in fats and carbs too. There's 3 of your 5 a day in this recipe. I didn't peel them but you can if you prefer. I've left it fairly simple but you can add a touch of cream to make it luxurious, add some grated Parmesan for a nutty flavour or some potatoes to thicken it up and make it more filling. We love to hear your feedback. x00Slow Cooked Pork & Apple Mayflower Curry.Mayflower Curry Powder has been a godsend on many occasion. It has all the spices (cumin,turmeric etc) and thickeners you need to make a very tasty curry.This makes it very economical if you fancy a curry and don't have it all to hand. I use the extra hot blend which is actually not as scary as it sounds. Its still relatively mild in flavour with just a little bit of a kick to it and is perfect for the Slow Cooker as it cooks off some of the heat and leaves it with a full bodied flavour. There's this belief that you need to cook it on the stove to blend it smoothly but as you can see, you dont...it melts into the liquid in the SC leaving you with a smooth sauce. I've added an apple into this recipe as it goes really well with pork obviously, plus the natural sugars help make it slightly milder too but you can leave it out if you wish. I've also fried the leeks etc and the Pork before adding to the SC as this tenderises the meat and adds flavour but you can just skip this, add everything in at the beginning and follow the rest of the recipe. The choice is yours. Im sure you and family will enjoy this recipe but feel free to adapt it by swapping the pork for chicken,turkey or beef. She would always serve this after a trip to the butchers to get the weekly meat including a ham hough (or hock). This would be soaked,boiled then shredded and the best meat bits used in sandwiches and the rest in pies or soup. Nowadays they are easily available in the supermarkets. I've cooked it from scratch but you can totally cheat with this by just using a ham joint or even a packet of cooked ham from the supermarket along with a stock cube to give that depth of flavour. The mint is optional as its just as lovely without it, but I do like Minted peas so I added it. This is very filling and I'm sure will be a regular midweek recipe you and your family will enjoy no matter which way you do it. We love to hear your feedback x00Turkey Meatballs in a Creamy Peppercorn SauceThia dish caused a discussion between my sister and I. We were both cooking meatballs but I prefer a creamy sauce to her tomato based sauce and I think it works better with the milder taste of turkey. This is a lovely change to the usual and I'm sure you will agree with me lol. Its creamy richness has just the right amount of heat but if you like it a little spicier then by all means adjust it your preference by adding more peppercorns as the cream cheese takes some of the heat out of the dish. These meatballs are large so I cut them in half before serving and this makes them go further but you could use smaller ones, add a few more or even add 1 or 2 sausages into the sauce too. We normally associate them with late nights, a few drinks, and rolling from the pub into the kebab shop to finish off the night. Its a right of passage when your out partying 🤣 These are a little healthier, and cheaper, as I'm using Turkey breast but you could use chicken breasts or thighs if you prefer. I've wrapped it in a garlic flatbread(recipe on the website) and added side salad and Tzatziki dip (recipe on the website) too, but again you could serve with chips or rice. We love to hear your feedback x00Roasted Pepper, Carrot & Chilli SoupNow normally when I'm making a soup or a curry or anything to do with adding peppers, I just chop them up and bung them in after I've added the onions, but I'd just watched a video of an Italian granny (- I love Pasta Grannies) 😁 - toasting them on her gas stove top and I thought " hmmm, I bet they taste amazing!" So I did my version ...I don't have a gas stove so I did them in my Halogen oven and although they didn't come out black , they are still the sweetest peppers I've tasted so I'll definitely be doing them again. Its worth that little extra time. This is a very simple recipe with just a few ingredients but a lot of taste. You can tailor it to suit you and your families tastes by adjusting the recipe slightly...not baking the peppers, adding less chilli, substituting the cream cheese for double cream or creme fraiche...the choice is yours. This recipe changes things up a bit by using Sweet potato, dried fruit and a tangy marinade. You can buy a jar of Moroccan Seasoning / Ras El Hanout but its expensive to buy those small jars....much better to make it from scratch and store it in an airtight container. Exactly what you want from a bowl of soup.Cooked beetroot is a totally different flavour from the stuff you serve at a picnic. This has an earthy warm flavour
that works well with the salty tang of the Feta. You could use Parmesan or a strong cheddar too. There's not a lot of waste as the skin, stems and leaves are edible too so don't chuck them away!
