Pico de gallo is a popular form of uncooked salsa made from lime juice and coarsely chopped raw ingredients including tomatoes, onions, and coriander leaves.
It's very versatile and can be as simple or as full flavoured as you wish.
It can be used as a side dish to pep up a salad, a topping on nachos, or served alongside a humble toasty or baked potato.
My favourite way to serve it is on a bed of spinach,garnished with some cashews. It makes a simple Hassleback potato dish very filling.

I've used May Berry's recipe but tweaked it a little by using shop bought pastry as I had it in, but you could bake your own if you wish.

00Air fryer Roast Cauliflower SaladThis spicy cauliflower with smashed avocado recipe can make the perfect main course, lunchtime salad, or Indian side dish, as part of a curry night feast.
I softened the cauliflower in the microwave beforehand to save a little time, then tossed it in the spice mix before adding to the Ninja Foodi / air fryer and cooking until golden and tender. It's a deliciously simple vegetable dish that’s not only healthy, but versatile too as you can swap out the spices or the salad to whatever suits you and your families tastes. I used garam masala as its a great spice blend but you could swap it for individual spices, such as ground cumin, coriander etc. I also used a mix of red and yellow pepper as thats what I had available but you could use any colour you prefer.

Sometimes I swap the fish about, depending on what's available or on offer on any given week. For this recipe I'm using smoked Haddock...the proper white smoked fish (the yellow stuff is only coloured to make it look more appealing)..... naturally smoked is fine too.
You could also use River Cobbler, Mackerel or any fish you and your family prefer.

E x00Fruity Couscous.Couscous – sometimes called kusksi or kseksu – is a traditional North African dish of small steamed granules of rolled semolina that is often served with a stew spooned on top.
It's naturally low in fat, can be a good source of fiber (the whole wheat version), and provides some protein, B vitamins, and minerals.
Used instead of rice or pasta it can be served plain or with a little spice mix, fruit, chopped nuts etc.
This makes it a tasty addition to salads.

E x00Steam and Crisp Roast ChickenThis is my first experience of using the Ninja Foodi to steam and crisp chicken and potato wedges, and it certainly won't be my last. The wedges were the nicest I've tasted and the chicken was delicious with moist meat and a crispy skin just bursting with flavour.
I've kept this rather simple, with garlic lemon wedges, and a herby crust on the chicken, but by all means experiment by adding other vegetables to the pot, along with any herbs, spices etc that you prefer.
I'm sure all the family will enjoy this recipe as it can be a quick and easy midweek meal or a Sunday dinner..

Borne from the necessity of getting rid of an ugly cold virus that plagued me for over a week, robbed me of my appetite, and curtailed my daily activities.
I had to get rid of it asap as I hate being stuck indoors.
The combination of flavours may seem a little strange but it was delicious. Why not give this a try, even if your hail and hearty....don't wait till your poorly to taste it.. im sure your family will enjoy it too. I've used the Sear/ Sauté element of the Ninja Foodi for this but it can easily be done on the hob or the Slow Cooker.

It also makes a lovely topping for loads of savoury dishes, such as fish, or meat.....add some vegetables into the mix and you'll have a filling meal in no time.
In this case I've used chorizo, as that's what I had in the fridge, but you could use bacon, sausage or whatever you have that needs using up. 00Cream of Celeriac SoupI'll be honest, it's not the prettiest looking of the vegetable family, but looks aren't everything. This humble, ugly vegetable is very versatile. You can add it to soup, casseroles, traybakes, curries, or mash it for the creamiest mash ever.
It's a great low-carb alternative to potatoes.
I've used the Ninja Foodi Multicooker to Pressure Cook the ingredients for this soup as it's so quick, but then I transferred to a pot to blend, as its not advisable to do so in the pot itself, as the bottom is concaved and could be damaged. This extra step takes minutes but you could leave it chunky if preferred.
I'm sure your family will enjoy it either way.
I used a mix of red and white onions as that's what I had.....and It's just as easy to swap out some of the ingredients too, if you prefer..
