Air fryer Roast Cauliflower Salad

This spicy cauliflower with smashed avocado recipe can make the perfect main course, lunchtime salad, or Indian side dish, as part of a curry night feast.
I softened the cauliflower in the microwave beforehand to save a little time, then tossed it in the spice mix before adding to the Ninja Foodi / air fryer and cooking until golden and tender. It's a deliciously simple vegetable dish that’s not only healthy, but versatile too as you can swap out the spices or the salad to whatever suits you and your families tastes. I used garam masala as its a great spice blend but you could swap it for individual spices, such as ground cumin, coriander etc. I also used a mix of red and yellow pepper as thats what I had available but you could use any colour you prefer.

 1 Cauliflower head
 2 tsp ground Garam masala
 ½ tsp ground Turmeric
 ½ tsp Chilli flakes (optional)
 1 tbsp Oil
 2 pinches Sugar
 2 pinches Salt
 100 g Baby Spinach
 100 g Mixed salad leaves
 1 Pepper
 4 tbsp Salsa (optional)
 1 Lemon
 2 pinches S&P
 1 tbsp Balsamic glaze
 Avocado (optional)
 2 Spring onions

Prep:- Cut the cauliflower into florets.
Slice the Pepper (I used 1/2 red & yellow)
Slice the Spring onions.
Zest the Lemon and squeeze the juice into a bowl.
Cut the Avocado in half,remove the stone and scoop out the flesh.
Add the flesh to a bowl, add half the lemon juice. Mix through.

Add the dried spices- garam masala, turmeric, chilli flakes,sugar and salt into a bowl.
Add the oil and mix through.

Add the cauliflower to a microwave safe bowl.
Pour over 200ml of hot water.
Cover with a microwave safe plate or clingfilm.
Microwave on high for 8-10 mins ( until the cauliflower is slightly soft but not falling apart)
Once cooked, remove with a slotted spoon and drain on some Kitchen roll.

Add to a dry bowl, drizzle over the spice blend a toss gently until the florets are coated.

Place in the Airfryer.
Switch the Airfryer/Foodi on, select 180° for 15mns (shake after 7 minutes.

Meanwhile, Assemble the salad.
Divide the spinach and salad leaves between 4 bowls.
Add the sliced pepper.
Add the tomato salsa.
Drizzle over the lemon juice.

Once the cauliflower has cooked. Remove from the Airfryer.
Divide between the salad bowls.

Use a fork to mash the avocado, add
the lemon zest, and a pinch of s & p.
Stir through.
Add a tbsp of Avocado to the centre of each bowl.

Scatter over the spring onions.
Drizzle over the Balsamic glaze.
Sprinkle over the remaining s & p.
Taste and adjust the seasoning if needed

Serve warm with a slice of crusty bread.

Balsamic for yoghurt dressing.
Lemon juice for lime.
