00Pesto crusted Cod HashI set out to use some Cod fillets I had and top it with maybe Pesto, then use what I could find in the fridge to cobble together a dinner. So, I added in a tin of new potatoes and a bit of bacon, but after baking them separately I thought, why not combine this into a hash? so I did lol. You can of course do this at the beginning instead of halfway through as I did lol making it a one pot meal. This feeds 2 but it's easy to double up on the quantities to feed 4. Combining the unique sun-dried tomato, garlic & cheesy flavours of pesto with smoky bacon and the delicate flavours of cod this dish is full of yummy flavours. It's speedy and filling and using frozen cod fillets can be very economical. Its also easy to adapt by swapping cod for pollock or salmon, green pesto for red or bacon for pancetta. You can bulk it out by adding extra vegetables too and even a sprinkle of Parmesan.. It really is very versatile and its easy to adapt to you and your families tastes. We love to hear your feedback x 00Slow Cooker French Onion SoupThere are few things more comforting than a real French onion soup - slowly cooked, caramelised onions that turn mellow and sweet in a broth laced with white wine and Cognac. The whole thing is finished off with crunchy baked croutons of crusty bread topped with melted, toasted cheese.....but this is FYF French Onion Soup so no brandy and no wine. Instead, we have beefy bovril cubes and a combination of Worcestershire and Soy sauce to make it as rich in flavour as any that you will get in a restaurant but at a fraction of the cost. I used a mixture of onions-some common or garden ones plus some shallots that I had left from another dish. I also used garlic butter on the bread before toasting the mixture of white and red mature cheddar cheese, adding another depth of flavour to this yummy soup. This is a great recipe that uses minimum ingredients but packs lots of taste and is very filling. Cashew chicken is a Chinese-American dish that combines chicken, with cashews and either a light brown garlic sauce or a thick sauce made from chicken stock, soy sauce and oyster sauce. As this is FYF I have adapted it slightly to our ethos of using what we have available in the cupboards.There's very little prep and the bonus is, by throwing it in the slow cooker, it leaves you to get on with your day. I used White wine vinegar instead of Rice wine vinegar and chicken breasts instead of thighs. You can adapt it to suit you and your families tastes and budget also by adding peppers or other vegetables that you prefer. The choice is yours. A base of Greek yogurt, flour and a little baking powder. Its similar to a
naan bread or a pitta.These can be whipped up in no time and, slathered with yummy garlic butter can be eaten on their own,as part of a lunch stuffed with salad and cold meat, or even a dinnertime kebab.The choice is yours. With so few ingredients this is a great one for the kids to do. Cooked dry on the stove, this bread takes just a few minutes to crisp and bubble up. You can add other ingredients-chilli flakes for a little heat or cheese if you wish to make it more savoury. This really is very versatile and you need never run out of bread again. I didn't have plain flour so used bread flour and it worked out well but if you prefer using plain flour that is totally fine.

Is there anything nicer than the smell of garlic butter basting the chicken and making it full of flavour and crispy skinned deliciousness. I've used Chicken drumsticks which are cheap and tasty but you could use thighs or breast whichever you and your family prefers. You could even use it on a full Chicken if you fancy. I used Farfalle pasta as that's what I had but you could use any pasta you have in your cupboards .You can also bulk it out with any extra vegetables you and your family likes, add some garlic bread and you have a filling meal in no time. Its so easy and yet so yummy and I'm sure this will soon become a family favourite for you and your children too, as it is in our house. There's chocolate, mallow,caramel and then a little more chocolate, so a little goes a long way. This would be a good recipe for the children to help with as it's a no bake- they would just have to be careful with the hot SC. Its great for lunch boxes,picnics or on its own with a cuppa, and even makes a great gift for Christmas. The white chocolate piping is totally optional - my piping bag burst so it went a bit awry but I styled it out and said it was to make it rustic looking lol -think I got away with that as it adds to the charm of being homemade. Its speedy and simple enough to do, so is perfect for a midweek dinner. Dont let the different steps put you off as it's just a Coat,Fry,Bake process thats easy to do. Once you get the hang of doing this a few times it wont take as long and definitely wont be as daunting as the first time. I've used mayonnaise to coat the chicken as A) I had no eggs and B) I really like how it keeps the chicken from being dry but you could just use eggs as it works just as well. I've used 4 breasts to give 8 pieces in all, but you could easily use 2 breasts to make 4 pieces and cut the costs considerably.
