00Steam and Crisp Roast ChickenThis is my first experience of using the Ninja Foodi to steam and crisp chicken and potato wedges, and it certainly won't be my last. The wedges were the nicest I've tasted and the chicken was delicious with moist meat and a crispy skin just bursting with flavour. I've kept this rather simple, with garlic lemon wedges, and a herby crust on the chicken, but by all means experiment by adding other vegetables to the pot, along with any herbs, spices etc that you prefer. I'm sure all the family will enjoy this recipe as it can be a quick and easy midweek meal or a Sunday dinner.. Why not give this a try and let us know how you get on in the comments below . 00Make me better Roast Chicken soup.There's nothing nicer than a warming bowl of chicken soup that's made fragrant with fresh lemon, ginger and dill. Borne from the necessity of getting rid of an ugly cold virus that plagued me for over a week, robbed me of my appetite, and curtailed my daily activities. I had to get rid of it asap as I hate being stuck indoors. The combination of flavours may seem a little strange but it was delicious. Why not give this a try, even if your hail and hearty....don't wait till your poorly to taste it.. im sure your family will enjoy it too. 00Savoury Chorizo & Vegetable CrumbleCrumble doesn't have to be used just for a pudding. It also makes a lovely topping for loads of savoury dishes, such as fish, or meat.....add some vegetables into the mix and you'll have a filling meal in no time. In this case I've used chorizo, as that's what I had in the fridge, but you could use bacon, sausage or whatever you have that needs using up. 00Cream of Celeriac SoupI'll be honest, it's not the prettiest looking of the vegetable family, but looks aren't everything. This humble, ugly vegetable is very versatile. You can add it to soup, casseroles, traybakes, curries, or mash it for the creamiest mash ever. It's a great low-carb alternative to potatoes. I've used the Ninja Foodi Multicooker to Pressure Cook the ingredients for this soup as it's so quick, but then I transferred to a pot to blend, as its not advisable to do so in the pot itself, as the bottom is concaved and could be damaged. This extra step takes minutes but you could leave it chunky if preferred. I'm sure your family will enjoy it either way. I used a mix of red and white onions as that's what I had.....and It's just as easy to swap out some of the ingredients too, if you prefer.. 00Chocoate Fudge TiffinTiffin is a Scottish version of the classic fridge cake. It's a delicious 'no bake' traybake made of crushed biscuits, butter, sugar, and raisins (sometimes cherries) and topped with a layer of melted chocolate. I remember my Mum making this often as it was a great addition to our school lunchboxes. She sometimes swapped the chocolate topping fir Icing, and that's exactly what I've done here. This makes it very rich so a little goes a long way. I've used a mix of plain,chocolate, and ginger biscuits, but you could just use digestives or rich tea. Its a great recipe to use up all those half empty packets of broken biscuits that have gone a bit soft or slightly stale. It's easy to adapt to suit you and your families tastes. 00Air fryer Celeriac FriesI'll be honest, it's not the prettiest looking of the vegetable family, but looks aren't everything. This humble, ugly vegetable is very versatile. You can add it to soup, casseroles, traybakes, curries, or mash it for the creamiest mash. It's a great low-carb alternative to potatoes. They may not be the crunchiest fries you've had, but the soft creamy taste is lovely. You can add some different toppings, herbs,spices, etc, to flavour them ...sesame seeds for crunch or even Parmesan for a tangy taste, or keep it simple with just a little salt if you prefer. The choice is yours. I've done these in the Airfryer but they can be done in the oven too. 00Sticky Glazed Ham Hock (slow cooked)Ham hock or lower leg of pork is a very versatile and economical cut of meat. It makes a nice change from a joint or chops. It's best cooked in the Slow cooker to make the meat really tender, but it can also be done on the hob or in the oven. I've used apple juice to glaze the hocks but you could use ginger beer, orange juice, cider or beer. I finished off in the oven to allow them to become sticky and charred but this can be done in the Airfryer too. I've used unsmoked hocks, but smoked is fine too. The choice is yours. Tip- my hocks were trimmed to remove the fat by my butcher but you can leave it on and just score the skin beforehand. Once cooked this can then be removed to crisp up in the oven if preferred. 00Salt & Chilli Crispy Kale SaladA warm salad is lovely and not something we tend to eat a lot of, especially in the winter months when we are thinking of lunch, as we reach for soup or a toasty first. This recipe just peps up a lunchtime bowl of salad by using some lovely continental Ingredients that I'm sure you and your family will enjoy. This serves 2 as a main dish or 4 as a side dish. As with most of our recipes you can adapt it to suit your families tastes by adding or subtracting any of the ingredients I've suggested. 00Curried Cauliflower SoupCurried Cauliflower isn't the first thing that springs to mind when you are making soup, but I can promise you that it's delicious. This is a great recipe to use up that bag of frozen florets that have been languishing in the freezer for ages. It's also a relatively cheap recipe to make because you get more in a bag than you would if you bought fresh. I've used a Mayflower Curry Powder ( extra hot) as it has a blend of Curry powder,Coriander, Turmeric, Cumin, Chillies, etc, but you could use whatever curry powder or paste you prefer. It acts as a thickening agent, too, so it can stretch out a recipe to feed 6 instead of the usual 4, if needed. It's actually not very spicy at all, but adding the peanut butter calms the heat down, too. You could use the medium version if you prefer. You can adapt this recipe by adding or subtracting any vegetables and herbs you like to suit you and your families tastes. You can add potatoes, oats, or butter beans to bulk it out, too. It really is very versatile. (I added some slices of red pepper that needed using up) I've used the PC part of the Ninja Foodi Multicooker as PressureCooking is not only speedy but it ensures maximum flavour too, but this can also be done in the Slow Cooker,Instant Pot, or on the Stove.
