00Roasted Garlic (baked)This is meal prep that is so easy to do and gives fantastic results, Why bother with meal prep? I hear you ask. Because It will take your dish to the next level. It's great to add to butter, pasta, pesto, curries etc. Roasted garlic cloves make food taste amazing. It is softer, mellower, and almost sweet in comparison to raw garlic, which some can find too strong or even bitter in comparison. I promise you, you won't want to use it any other way once you've tasted the difference. Baking it low and slow gives the best results. You want to soften the cloves and caramelize the tops until they are golden brown. I find popping them in at the same time as I'm roasting potatoes or meat etc makes it more cost effective too. It can keep for a few days in the fridge and can be frozen too for convenience. You can add herbs, chilli flakes etc too but I've just left it plain this time. 00Air Fryer King Prawn TacosKing Prawns can be expensive but now and again, you get them on offer or reduced, and you want to make the most of them without ruining their delicate flavours. This recipe shows them off perfectly. I've kept this very simple by just using a few ingredients to marinade the Prawns with and pairing it with a little salad and some crunchy Tortilla crisps for added bite. Tacos are a great summer dish that's light, full of flavour and very versatile. You can add any toppings you fancy or keep it simple with just a green salad. The choice is entirely up to you and your families tastes. You can make it fun by putting everything on a board and letting them fill their own Taco shells, or wrap in greaseproof or foil for an authentic street food vibe. 00Cheesy Cottage Pie (in the Ninja Foodi)A timeless classic that is loved by families from all corners of the country, but we all have variations of the ingredients, depending on which part of the country we live in. This recipe takes it up a notch by using the modern convenience of the Ninja Foodi to Pressure cook the potatoes before cooking the mince in a more traditional way.....you can PC the mince if you prefer but I didn't feel it was necessary, as I like to allow the flavours to develop using the Sear/Saute function. The flavours of the seasoning mix are subtle but give depth to the dish, which is topped off with creamy mash and sharp cheddar. It's a very adaptable recipe- I didn't have a whole pepper so used a mix of 3- red,green, yellow. I also used a mix of cheeses- mature white and red cheddar that I had in the freezer. I used 1/2 a bag of pre diced carrot n swede too as I found it lurking in the freezer. I'm sure your family will be requesting this to be added to your menu rotation. 00Steam Airfried Basa Fillets with a Medley of Mediterranean VegetablesThis is a one pot dish that's oh so simple but bursting with fresh flavours. It's perfect for a date night, quick lunch or just a light bite. I decided to use the Steam Airfry as both the potatoes and fish were delicate so needed a gentler form of cooking, but you can totally do this in your oven or on the hob if you dont have the Foodi. I've used basa fillets(river cobbler) as they are relatively cheap,mild in flavour with a firm texture that's robust enough for the Airfryer but you can totally change this for salmon,trout or any fish you prefer.... If using skinless fish then place it on some parchment paper so it doesn't fall through the grill rack onto the vegetables below. I cooked the fish for 8 minutes but it probably could have done with a minute or 2 less....but its all a learning curve isn't it? So bear with me whilst we learn together. If doing more than 2 fillets then best to do them in batches so they cook evenly. I added a little extra veg to the pot too, that needed using up so feel free to do likewise, or just ignore. This is a very easy dish to adapt to your tastes. Swap the fish, swap the veggies, swap the olives for green beans or leave them out if you dont like them etc. Why not give this a try and let us know how you get on in the comments below. 00Air Fryer Coconut Prawns with a spicy mayo dipIf your new to air frying or just use it for basic cooking - for chips, nuggets etc then this recipe is for you. It's easy, speedy and best of all full of flavour. The step by step picture guide let's you follow the recipe easily and allows you to tailor it to suit your machine, whether it's a simple Air fryer or a multi cooker, like the Ninja Foodi. As with almost all of our recipes you can adapt it to suit your needs too by swapping the panko for regular or homemade breadcrumbs, or using cooked prawns instead of raw- adjusting the cooking times accordingly, If you don't like coconut then just use all breadcrumbs. 00Battered Prawns with Crispy KaleFind some prawns in the reduced section? Then grab a bag of Kale and you can try this recipe This is a great recipe when you want something a little bit different. You can have it as a main meal, lunch or just a snack. I flatten the Prawns out, as I think it looks better, but you don't have to. It doesn't affect the taste. I've also added some vine tomatoes to the oven along with the kale but again that's optional. If you like a little spice then add some chilli flakes. I've used a shallow pan for frying then finished off in the oven so you dont need too much oil. This feeds 2 but can easily be adjusted to feed 4 by increasing the ingredients. 00Caramelised Red Onion and Feta Tart.Dinner this evening is a speedy, full of flavour tart with a little taste of the Mediterranean. I tend to find pastry is always in the reduced section of the supermarket, so it can be made into a very cheap dinner in no time, by adding just a few ingredients- some we always have in, plus a wee bit of cheese- in this case Feta- from a salad dish we had the day before. Why not add some chopped olives for that true Mediterranean taste? As with lots of our recipes, this one is easy to adapt to you and your families tastes by swapping out the Feta for cheddar or the red onions for white etc. I'm having with couscous and a spinach salad so didn't add to the tart itself, but feel free to add in some spinach or parsley if you prefer. 00Slow Cooked Beef Stifado Greek beef Stifado, (Greek beef stew)!! It's a juicy and tender, melt-in-the-mouth stew full of Mediterranean flavours with a delicious, slightly sweet, intense tomato-based sauce which is perfect for colder nights. This can be cooked on the stove as a one pot meal but I decided to do it in the SC to allow the flavours to develop in their own time. This is easy to adapt to suit you and your families tastes and adding more vegetables etc. I've made it child friendly by swapping out the red wine for a stock pot but you can reverse that if you prefer. 00Fish in Parsley SauceThis is really a deconstructed Fish Pie without the topping. I had intended on using white fish but found a packet of fish pie mix and a bunch of parsley in the reduced section of the supermarket and thought " why not use that instead" I was not disappointed as it was delicious. I love how the rich colours of the fish stand out against the creaminess of the sauce and then adding the extra green veg deepens the colour of it. This is easily adapted to suit you and your families tastes by using a different fish, adding some prawns or just a plain white sauce rather than the parsley sauce.
