Not many of us have a clay oven but we can replicate slightly by using our own ovens.
You may never order this from a Takeaway again as its so easy to do.
You can adapt it to suit your families tastes by making it as mild or as spicy as you like. The yoghurt cuts down on the heat of the spices and tenderises the meat at the same time.
You can use thighs,drumsticks or chunks to make kebabs too instead of using a whole chicken.

00Goats Cheese & Bacon TartletsWhen there's not much in the fridge for lunch I like to make these quick and easy tartlets. They are seriously delicious and so versatile, as you can add any toppings, but my favourite is Goats cheese. The combination of tangy saltiness lends itself so well to the sweetness of the caramelised onion and the smoky taste of the bacon. Think you don't like Goats cheese? This may change your mind. I used mainly leftovers lurking in the freezer.
Puff pastry- I used a shop bought block but the ready rolled works well too.
Goats cheese,
Bacon bits(leftovers) Tomatoes. I used cherry but any will do, and some mixed frozen peppers.
You can tailor this to suit you and your families tastes by swapping out the Goats cheese for any cheese, including Cheddar, add salsa instead of the onions or cooked ham instead of bacon etc. You can get 8/10 tarts, depending on the size of your squares/rectangles or you could make 1 whole tart and cut into slices once cooked. 00Spinach and Feta Filo pieDinner this evening, is a recipe from a friend that is one of my favourites so I make it at least once a month. My kids call it Mum's yummy cheese pie but its actually a Greek dish- Spanakopita. If you haven't tried it before, you're in for a treat! Spanakopita is a delicious savory Greek pie made of perfectly crispy layers of filo dough and a comforting filling of spinach and feta cheese.
Mines is by no means authentic but is just as delicious, as the principal is the same. I use what I have available at the time - cream cheese instead of eggs, red onion or white, fresh or frozen spinach, etc. I sometimes add the little tubs of olive,sundried tomatoes and feta found in the chilled cabinet. 00Onion Bahji’s Onion bahjis are an Indian fritter that's a standard side dish for a family curry night. Add a mint dip and you have the perfect pairing. They can be eaten hot or cold, so are a great TV snack when watching the footy, can be added to a picnic or a lunchbox. They can be as spicy or as savoury as you prefer, so play around with the spice blend till you get the taste you like. This goes for the onions too, as I used 1 red (for sweetness) and 1 brown. 00Easy Jam MuffinsI fancied something sweet for my afternoon cuppa so today I've made Jam Muffins as I have a ridiculous amount of jam but not much else in the way of filling. This is a super quick easy recipe that can be whipped up in no time. Its great if like me, your wanting an afternoon treat as they are lovely on their own or with custard, but they are also good to pop into a packed lunch box or a picnic box.
I don't add icing but you could if you prefer.
I've used Jam but you could swap it for chocolate spread or chips,lemon curd etc.

00Speedy Chicken Chow MeinA cheap and cheerful midweek dinner that is always a crowd pleaser.
You can adapt it to suit your families tastes by add any veg you like -mushrooms, broccoli, baby corn etc, but this is all I had in at the time.
You can also bulk it out by adding beansprouts and water chestnuts too, but again, I had none in. If you like it spicy you can add a sprinkle of chilli flakes, sweet - add a little honey or sugar.

It is also making the most of seasonal produce and adding some healthy nutrition to your lunch or dinner menu. It can be eaten as a main dish or as a side. Its also a great picnic addition as it can be eaten hot or cold. This simple dish takes very little time to prepare so is great for midweek dinners.. E x00Halogen Chicken, Fennel & Parmesan BakeThis recipe is full of flavour and makes a great midweek dish. Fennel is part of the carrot family, which you wouldn't think of, as its more akin to a giant onion. It has a liquorice smell that once cooked, melts away to produce a sweetness that lends itself well to lots of recipes. It's lovely in soup, stew, curry, or bakes. Pairing it with the nutty taste of Parmesan and the tang of lemon makes for great trio. I used 2 chicken breasts to cut down on costs but you could use 4 if you prefer, or swap for thighs. I also mixed the Parmesan with mature cheddar for the same reason. This dish only has a little sauce so I didn't use a lot of stock but if you like more sauce then its fine to add more if you prefer. This can also be baked in a conventional oven.

E x 00Winter to Spring Vegetable SoupSunshine in a bowl is how my daughter describes this soup. Its full of spring fresh vegetables and some bits that needing using up...soup is always a fantastic way to clear out that fridge drawer. The yelliw peppers give it that glorious sunny glow. You can adapt it to whatever you have available as the principles are the same. Prep, chop, cook then mash down or blend till you get the consistency you prefer.
