Easy Jam Muffins

I fancied something sweet for my afternoon cuppa so today I've made Jam Muffins as I have a ridiculous amount of jam but not much else in the way of filling. This is a super quick easy recipe that can be whipped up in no time. Its great if like me, your wanting an afternoon treat as they are lovely on their own or with custard, but they are also good to pop into a packed lunch box or a picnic box.
I don't add icing but you could if you prefer.
I've used Jam but you could swap it for chocolate spread or chips,lemon curd etc.

 400 g Plain Flour
 200 g Caster Sugar
 2 Eggs (medium)
 250 ml Milk
 125 ml Vegetable Oil
 3 tsp Baking Powder
 ½ tsp Salt
 1 tbsp Butter(melted)

Prep:-
Pre heat the oven -190°C or Gm 5
Weigh out your ingredients
Line a muffin tin with 12 paper cases

Add the eggs, oil, milk and melted butter to a bowl or jug and beat together.

In a separate bowl add the dry ingredients (flour, sugar, baking powder) and mix together.

Pour the wet ingredients into the dry ingredients and
beat into a batter.

Put a spoonful in each muffin case, then a blob of jam then a spoonful more of batter, repeat this till the muffin cases are 2/3rds full.

Place In the middle of hot oven on 190° or gas mark 5 for 20-25 mins.
Test using a cocktail stick- it should come out clean

Remove from the oven, place on a cooling rack until ready to serve.

These are lovely on their own or with custard.

Easy Swaps :-
Pl flour for SR- and omit the baking powder.
Jam for Lemon Curd, Chocolate spread, Apple sauce or Marmalade

Tip :- Add a drop of Vanilla extract to make a sweeter batter
Tip:- to stop the jam sinking keep the batter quite thick
