00Beef CurryFragrant,spicy and tangy this is a warming midweek dinner. A curry is a great way of using up cheaper cuts of meat and bits of vegetables that you find at the bottom of the fridge. You can add almost anything to it and it works well. It's easy to adapt to your families tastes as you just omit what you don't like or add what they do. You can speed up the cooking by using frying steak etc or let it simmer for 2-3hrs for a fuller flavour. The choice is yours. It's also a very forgiving dish as I forgot to toast my spices till after I had fried my meat lol but it still turned out great.This step by step picture guide allows you to follow each step closely but don't be afraid to adapt it if need be. 00Mongolian Beef SteakSweet, tangy and with a little spice this recipe ticks all the boxes. Usually garnished with Spring onion but as I had none I added peppers and onion. Slicing the beef into strips meant I could use 1 rump steak for 2 people so it's very economical too and quick to cook...always a bonus. Im sure this will become a firm favourite in your family as the sweetness counteracts the spice making it not too spicy for the children but feel free to adjust the ingredients to suit your families needs,e.g.,less spicy or sweet or even substitute beef steak for mince or chicken as it's an all rounder recipe that works well with most meats.This feeds 2 but its very easy to adjust the amounts to feed 4 or more.The step by step photo guide allows you to follow the recipe easily. 00Beef Teriyaki Stir FryA Stir fry is a speedy dish that is full of flavour and can be as varied as your imagination.The high heat you are using to cook it lends well to a variety of vegetables that you may not normally eat all at the same time. Its also a good way to use up bits of veg that are languishing in the fridge.So I used a stir fry pack but added onions and spinach. I used rump steak as again it's quick to cook and full flavoured. I cook the steak and then add to the veg for the final minutes as it means I'm not overcooking the meat and making it dry, but feel free to add it along with your veg if you wish.The Teriyaki sauce is tangy and sweet and a little goes a long way as it can take all the colour out of the vibrant veg and you end up with a brown stew.The step by step guide means you can follow along but do feel free to add your own touches too. 00Slow Cooker LasagneSlow cooked Lasagne is a softer but no less delicious dish than is cooked in the oven and I think its my favourite way of cooking this now. I tried a variation of the white sauce by adding onions and lots and lots of cheese because no dish is ever spoiled by too much cheese 😄. 00Slow Cooker Beef Stew & DumplingsA stew is a great way of using up leftovers and those little bits of stray veg left in the bottom of the fridge,or in freezer bags that you keep promising to use. You can mix it up any way you like and use stuff you or the family maybe don't like so much, as the slow cooker will blend everything together, or you can just keep it simple and do a classic meat and two veg. I've used some cooked Mediterranean mixed veg,some peppers and wholegrain mustard. The addition of dumplings makes it a very filling meal and a nice change to potatoes.
