Air Fryer Chicken Nachos

This recipe is so versatile. It makes for a great midweek dinner....or as one of the best TV snacks ever!
Perfect for movie nights, watching the footy in the afternoon, a picnic in the garden, or lounge, if the weather turns cold, or as part of a sharing platter for a midweek feast.
I used Chicken but you can totally substitute this for minced beef, pork, or leave it out altogether and just have the classic combo of cheese, tomato salsa, guacamole and sour cream. The choice is yours. You could also use cooked and shredded chicken and miss out the 1st steps altogether.The fajita seasoning mix can be found on the website and at the bottom of the page. It's great to make a batch and keep the remainder for another recipe, or you can use a pre made packet mix. The final stages of the recipe are best cooked in 2 batches as you want nice crunchy Nachos, which you won't get if you crowd the pan - the Air fryer needs to circulate the air to do its job correctly. This stage take minutes so don't worry about not serving it together- just cover the 1st batch with foil for a few minutes and it will be fine.  350 g Chicken Thighs
 300 g Tortilla crisps
 1 tbsp Onion
 1 tbsp Oil
 2 tbsp Fajita seasoning
 4 Spring onions
 150 g Tomatoes
 200 g Cheddar Cheese
 4 tbsp Sour Cream
 4 tbsp Guacamole
 4 tbsp Salsa
 2 pinches Chilli flakes (optional)

Prep:- Dice the chicken into bite size pieces.
Dice the onion.
Dice the Spring onions.
Dice the tomatoes.
Grate the cheese- I used a mix of red and white mature cheddar.
Make up the fajita seasoning.

Add the onion to the Air fryer basket.
Add the chicken.
Sprinkle over the oil.
Sprinkle over the seasoning mix.
Close the lid and air fry at 180° for 8-10 minutes or until the chicken is cooked.Shake/stir after 5mns.

Once cooked,
carefully open the lid and stir the chicken- you may need to break it up with a wooden spoon - give it a good stir, then remove and place in a bowl, cover with foil and set aside for now.
Clean the basket with damp kitchen roll.

Place parchment paper into the basket,folding over till it fits snuggly.
Start to layer up your Nachos:-

Scatter a layer of Tortilla crisps in the bottom, making sure some are laying on the sides of the basket.
Sprinkle over 1/2 the cooked chicken.
Sprinkle over 1/2 the Spring onions and the tomatoes.
Sprinkle over 1/2 the cheese.

Air fry at 180° for 3-5mns or until the cheese has melted....keep an eye on it as the Tortillas can burn easily.
Whilst that's cooking, assemble your next layer in a bowl-I used a pasta bowl- so that you can swap them over when the 1st batch is done.

Once cooked, open the lid and carefully remove the basket.
Lift out the parchment paper layer of cooked Nachos and place them onto a chopping board,
carefully slide the parchment paper out and place them into a bowl.
Cook the 2nd batch and repeat these steps.

To serve- Add 1-2 tbsp of each topping along with some spring onions and a pinch of chilli flakes.
Serve and enjoy.

Tomatoes for peppers.
Cheddar for any cheese

4 tblspn Chili Powder
1 tspn Garlic Powder
1 tspn Onion Powder
1 tspn Chilli flakes
2 tspn Paprika
3 tspn Ground Cumin
2 tspn Sea Salt
1-2 tspn Black Pepper
