Apple Pie

Yields1 Serving
 250g plain flour
 125g butter ( or marg)
 50g caster sugar
 1 egg yolk
 Cold water to bind
 About 5 eating apples ( Braeburn or coxs are good )
 1 cooking Apple
 Juice and zest of half a lemon
 1 tblspn cinnamon
 Handful of raisins ( optional )
 3 tblspns Demerara sugar
 Beaten egg to glaze
 Caster sugar to sprinkle

Sift the flour into a bowl

Add the sugar

Add the butter and rub together to form a breadcrumb like texture

Add the egg yolk and mix

5

Add enough cold water to form a dough

Knead lightly

Wrap in clingfilm and chill for at least 30 minutes

Peel and slice your apples

Put in a large bowl add the raisins of using

Add the lemon juice and zest

Then the sugar and cinnamon

12

Mix well to combine

Put in a large saucepan and let simmer until the apples soften slightly

14

When cooked remove from heat and allow to cool completely

15

Divide pastry into 2

16

Roll out one half on a floured surface and line a greased pie dish

Fill with the apple mix

Roll out the top

19

Cover the apples with the pastry and seal , make a slit in the top of the pastry

Brush with the beaten egg , decorate with pastry leaves of liked

Sprinkle on a little caster sugar

Bake in a hot oven 180C for about 30-45 minutes until golden brown

Serve with custard , cream or ice cream ( or even all 3 lol )
