Apricot tart tatin

Use plums or apples or pears in this recipe

 1 pkt puff pastry
 8 apricots or a tin
 75g caster sugar
 40g cubed butter

Heat oven to 200c

Halve the fruit removing the stones

Put a small ovenproof frying pan on a medium heat

Add the sugar and let it melt . DO NOT stir the sugar - swirl the pan . Cook until the sugar caramelises and turns a golden brown

Take off of the heat and stir through the cubes butter

Keep stirring as it thickens this will take 2-3 minutes

Place the apricots into the caramel cut side down

Let it cool for 15- 20 minutes

Roll your the pastry .

Use a dinner plate as your guide and cut out a circle

Place on top of the fruit and push down the sides

Bake for 20-25 minutes until the pastry is golden

Let the tart stand for a couple of minutes then quickly and carefully turn it onto a plate .

Serve with vanilla ice cream
