Bailey’s Hot Chocolate Pudding

In an earlier recipe I took a walk down memory lane and made a hot chocolate pudding that my Mum used to make for us as children but as I was eating it I thought "this would be lovely as a mocha which led my thoughts to coffee and cream then to whisky and cream and boom-Baileys!" And so an adult version was born.Its still quick and easy to make with a great chocolaty taste but has a little kick too. Perfect for a little indulgence.

 200 ml Milk
 100 ml Bailey's Irish Cream
 25 g Cocoa Powder
 45 g Sugar
 14 g Cornflour
 1 tsp Vanilla
 Chocolate pieces (optional)
 Squirty cream
 Chopped nuts

Prep:- add the dry ingredients-Cocoa, sugar and cornflour to a bowl

Add a little milk and mix into a smooth paste

Add the Milk, Baileys and Vanilla to a pot on a medium heat

Slowly add the Cocoa mix, whisking as you do till everything is combined.

Add squares or chunks of chocolate if you want it extra chocolatey and stir till melted

Continue whisking till its all combined. Bring to the boil. (this will cook out the cornflour) It will thicken and darken as you whisk

Take off the heat,let it cool slightly then pour into glasses or bowls. Let it cool then place in the fridge to set for 1hr

Once set, remove from the fridge, decorate with squirty cream, chopped nuts or chocolate shavings

Easy Swaps:-
Milk or Soya milk or any alternative.
Cocoa for drinking chocolate.
Cornflour for Plain flour.
Add cream into the chocolate for a bit of luxury.
Squirty cream for fresh cream.
