Bailey’s Rice Pudding

A very adult pud!

 160 g Pudding rice(40g per person)
 2 pt Milk
 100 g Sugar
 200 ml Irish cream (Bailey's or equivelant)
 125 Raisins or Sultanas

Rinse the rice then add to a deep pan with the milk and sugar

cook on a low heat until it's thickened-about 30mns appr-stirring frequently to prevent catching on the bottom

Add the Baileys and raisins,stir and cook for a further 5-10mns
Add a little more milk if needed.
Serve hot

Tip-swap 1/2 the milk for evaporated milk for a creamy taste
Tip-grate in some nutmeg , cinammon or a few drops of vanilla extract
Tip-grate over some chocolate shavings for added luxury
Tip-this can be baked in the oven 160° for 2hrs (add a knob of butter)
