Delicate Cod with a sweet tangy grapefruit salsa is a lovely refreshing addition to your usual dinner time menu. Using frozen Cod fillets, its relatively cheap and is speedy too, which is always a bonus I love how versatile it is. It has a mild flavor with a flaky consistency. My favorite way to prepare cod is either poached or oven baked. I've served this with salad and crusty bread but it's yummy with rice, especially coconut rice or roast potatoes. Ive used Cod but you could use any white fish, Salmon or even Tuna. It really is versatile and can easily be tailored for you and your families tastes. You can do this in a conventional oven also. This recipe feeds 2 but can easily be adjusted to feed 4. Why not give this a try and let us know how you got on in the comments below. We love to hear your feedback x
