Halogen Baked Cod with Grapefruit Salsa

Delicate Cod with a sweet tangy grapefruit salsa is a lovely refreshing addition to your usual dinner time menu. Using frozen Cod fillets, its relatively cheap and is speedy too, which is always a bonus I love how versatile it is. It has a mild flavor with a flaky consistency.  My favorite way to prepare cod is either poached or oven baked. I've served this with salad and crusty bread but it's yummy with rice, especially coconut rice or roast potatoes. Ive used Cod but you could use any white fish, Salmon or even Tuna. It really is versatile and can easily be tailored for you and your families tastes. You can do this in a conventional oven also. This recipe feeds 2 but can easily be adjusted to feed 4.  2 Cod fillets
 1 tbsp Oil
 2 pinches S&P
 For the Salsa
 1 Grapefruit
 2 pinches Chilli flakes
 3 tbsp Honey
 1 Handful of Coriander
 1 Handful of Spinach
 2 Spring onions

Prep:-
Peel the grapefruit and cut the white pith from the segments, snip segments into smaller pieces.
Chop the Coriander.
Chop the Spinach
Chop the Spring onion

Defrost the Cod. Drizzle with oil and season with S&P on each side.

Place in an ovenproof dish, cover with foil and Bake in the Halogen at 175°for 7-8 mns.

Meanwhile add the grapefruit segments to a bowl along with the juice,spring onion,Coriander and Spinach

Add the chilli flakes and 2 tbsp of honey

Mix everything together

Remove the cod from the oven, take off the foil carefully turn the fillets over (if you can)

Layer the Salsa on top,drizzle over the juices and return to the oven. Bake uncovered at 175°for a further 5-6 mns or until the fish is cooked through

Remove from the oven and drizzle over the remaining honey.

Serve warm with salad and crusty bread

Plain boiled rice or Coconut rice is slso lovely with this.

Cod for Salmon.
Spinach for Parsley.
Spring onion for onion.
Oil for butter.
Halogen for conventional oven-200°for same time
