BBQ chicken tray bake

Easy but tasty tray bake

Yields4 Servings
 6 tbsp Tomato ketchup
 2 tbsp Brown sugar
 2 tbsp Honey
 2 tbsp Sweet chilli sauce
 1 tbsp Worcestershire sauce
 2 Garlic cloves minced
 1 tsp Mustard (optional)
 1 tsp Onion powder or onion salt
 500 g Baby potatoes
 4 Carrots
 2 Parsnips
 2 Large chicken breasts
 2 Onions
 2 tbsp Oil

Par boil your large carrot and parsnip chunks and halved baby potatoes

Cut your onions into wedges and dice your chicken

Add all the bbq sauce ingredients into a small pot and heat through until the sugar has melted. Allow to cool

Once it’s cooled stir your diced chicken and onion chunks into the sauce and allow to marinade while your other veg is par boiling

Orr heat the oven to 200c / GM 6

Once your veg have par boiled, drain them and return to the pot. Pour in the oil and stir thoroughly to ensure everything is coated

Add the chicken, onion and bbq sauce to the potatoes and veg whilst still in the pot (it’s easy to stir and get everything combined

Put everything into a large oven tray / glass casserole dish. Try and lay it all flat

Put in the oven for 30 minutes. Stirring half way through
