A speedy midweek dinner

Oil the steaks on either side and season well with S&P
Heat the dry pan on a high heat and add the oiled steak. I do mine separately as I find it's easier to time

Cook for 2 mns then turn over and repeat for a further 2 mns. Remove from the pan and let it rest for 5 mns

Meanwhile add a little oil to the pan and fry the onion till soft

Add the mushrooms and fry for 2 mns

Add the garlic and paprika

Stir through till everything is coated

Add the beef stock and turn the heat up to boil for 2-3mns to reduce the liquid and intensify the flavour

Lower the heat to a gentle simmer and Add the yoghurt, mustard,lemon juice and spinach and stir through

Meanwhile slice the beef into thin strips

Add the beef strips to the pan, gently stir through and simmer for 4-5 mns

Serve with savoury rice,a wedge of lemon and a garnish of parsley
