Breakfast Quesadilla

A tasty alternative way to have breakfast

 8 Tortilla wraps
 8 Slices of bacon
 200 g Cheddar cheese
 100 g Tomatoes
 1 pinch S&P

Cook the bacon then chop into pieces,grate the cheese and chop the tomatoes

Place a wrap in a dry pan on a low / med heat

Sprinkle over a handful of cheese

Add the bacon

Add the tomatoes and season with S&P

Top with a little more cheese

Place a Tortilla on top

By now the bottom Tortilla should be lightly toasted so you need to turn it over.

Take the pan off the heat,take a plate and place upside down over the pan. Place the palm of your hand on the plate,lift the pan and carefully turn over so the plate is on the bottom. Lift the pan away and then slide the tortilla from the plate back into the pan.

The top Tortilla is now toasted and your toasting the bottom one now. Alternatively you can pop under the grill or in the oven

Allow the filling to cook for a few minutes so the cheese has melted

To serve, cut into slices but allow to cool slightly before serving as the tomatoes will be very hot

Repeat these steps for each Tortilla

Another way is to cook each Tortilla separately by adding the filling to one side then folding over like an omelette. This is an easy way for the children to cook them.

You can add scrambled egg,cooked sausages or keep it veggie as an alternative.
