Cajun salmon hash

 1 piece of salmon per person ( 2 if they’re small )
 2 butternut squash cut into small dice
 1 red onion finely diced
 Tin sweetcorn
 A couple handfuls frozen broadbeans - defrost
 1 red pepper chopped
 Vine on tomatoes -4-6 per person
 Tenderstem broccoli
 Cajun seasoning ( I used JD Seasonings)
 Chilli oil or frylight
 Fresh coriander , chopped

First pop the beans from the skins , throw the skins away

Sprinkle both sides of the salmon with the Cajun seasoning

Heat the pan

Add the salmon skin side down - leave it ! Let it cook almost all the way through

Remove to a plate

Add a little more frylight if needed

Throw in the butternut squash and onions , keep moving them in the pan

When they’re softening add in the pepper

After a couple of minutes add the corn and beans .

Stir the combine .

Add more seasoning and mix

Add a splash of water

Put the broccoli on top . Add a lid

After 3 minutes add the tomatoes . Put the lid back on

After 2 minutes sit the salmon on top . Put the lemon d on and leave for 2 minutes

Serve
