Cheats Mini Jam Doughnuts
Ingredients
150 g Plain flour
2 tsp Baking powder
Pinch cinnamon
1 Large egg
Milk to bind
50 g Caster sugar
Seed free jam
Sugar to dust
Oil to fry
Directions
Put the dry ingredients in a large bowl
Stir together well
Make a well in the centre add in the egg and enough milk to bind to make a thick cake like batter
Heat oil to 170c ( a couple of inches of oil in a wok is enough )
Once the oil is HOT add spoonfuls if the batter
Do NOT overload the oil they increase in size on cooking
Turn the doughnuts regularly and cook for about 3 minutes until lightly brown
Drain on kitchen paper
Rill in more sugar
Use a syringe to squeeze jam into the doughnuts
This will make about 9 doughnuts
