Chicken and Rice Soup

A hearty warming soup

 2 Chicken Breasts
 1 Ltr Water
 150 g Rice
 2 Chicken stock cubes
 1 vegetable stock cube
 1 tsp Mixed herbs
 3 Carrots chopped
 2 sticks of Celery chopped
 1 Onion chopped
 2 Garlic cloves chopped
 1 pinch S & P

Poach the chicken breasts by adding them to a deep pot and covering with water. Bring to a boil then lower the heat and gently simmer

Add the rice,vegetables,garlic ,herbs and stock cubes

Simmer for 30 mns , stirring occasionally

Remove the chicken from the pot and chop into small 1"pieces or shred if you prefer

Put the chicken back into to the pot,stir and simmer for another 5 mns, season if required before serving.

Serve with crust bread and a garnish of parsley if you wish

Tip:-You can skip step 1 and use cooked chicken and also cooked rice if you have it.
Tip:-You can add any other veg you have too such as leek.
Tip:-You can drizzle on some cream for a little luxury too.

Tip:-You can soften the vegetables by frying in a little oil before adding to the pot if you prefer
