Chicken Noodle Soup
Ingredients
2 Onions sliced
2 Cloves of garlic sliced
Knob of butter
Dash of oil
Chopped parsley
Salt
Pepper
4 oz Noodles
Dash light soy sauce
2 Cooked chicken breasts shredded or sliced
2 Sticks of celery
2 Carrots peeled and sliced on the diagonal
1 l Chicken stock
Directions
Heat the butter and oil in a large pan . Add in the onions , celery and carrots
Sweat them off for about 5 minutes , make sure they don’t colour
add In the garlic
Add the chicken the stock and some of the parsley
Bring to a boil and add the noodles
Turn toba simmer and cook for 15 minutes
Season with salt and pepper
Serve adding a dash of light soy sauce if liked and more parsley
