Loaded fries are springing up everywhere just now so I thought I'd add one to my repertoire. For officianados of chips n cheese (my daughter lol) this is a must-try!. This combines the smoky spice of Chorizo with the sweetness of caramelised onions to create a fabulous stand alone main course served with a salad, or as a side dish to accompany pizza or pasta. Its also a great TV snack, whether your watching a film or the footy. No matter how you choose to serve it I'm sure you and your family will love it. As with most of our recipes you can adjust or adapt as needed, to suit your families tastes - you don't have to coat the chips if you don't like paprika. Slice the Onions.
Slice the Pepper.
(I used a handful of mixed)
Peel and slice the Chorizo.
Slice the spring onion.
Slice the tomatoes in half.
Mix the Soy Sauce and sugar in a bowl.
Mix the Paprika, Garlic and Onion in another bowl.
Lay the fries on an oven tray. (You may need to bake them in batches.)
Sprinkle over the dry paprika mix. Toss the fries till they're coated.
Cook for 15-20mns at 200°
Meanwhile, Add the onion, pepper and Chorizo to a pan and fry on low/med for 8-10mns.
Stirring occasionally.
Mix the Soy and brown sugar and pour over the Chorizo.
Stir through then add the sliced tomatoes- keep a few in reserve to chop small and use to garnish
Once the fries are cooked transfer them to an ovenproof dish.
Sprinkle over half the cheese.
Layer on the Chorizo mix.
Cover with the remaining cheese.
Return to the oven and bake for 5-10 mns or till the cheese has melted.
Carefully remove from the oven.
Scatter over the Spring onion and chopped tomato.
Serve in individual bowls or one large sharing dish.
Serve with a side salad and some spicy mayo as a main dish, or as a side dish with pizza or pasta.
