Cream Cajun chicken and veg pasta

Beautiful low calorie pasta dish

 150 g Brown pasta
 250 g Chicken
 100 g Mange tout
 100 g Baby corn
 2 Large carrots
 4 Spring onions
 150 g Kale
 2 Peppers
 150 g Low fat cream cheese
 2 Veg stock cubes
 200 ml Boiling water
 1 tbsp Corn flour
 3 tbsp Cajun spices

Cook your pasta as per the ingredients

Add chicken to a wok and sprinkle with 1 TBSP Cajun spice. Fry for 5 minutes

Add all the veg except the kale. Sprinkle over the other 2 TBSP’s of Cajun spices. Fry for 10 minutes

Add the kale and fry for 2-3 minutes

Make up the stock cubes with the boiling water. Add to a small pot and add the cream cheese. Stir until melted

Add 2 ladles of the pasta cooking water and stir

Make up the corn flour with cold water and stir into the sauce until thickened

Stir the pasta and sauce into the chicken and veg and mix thoroughly

  1. Looks like a tasty recipe. Baby corn and mange tout though? How does this work with £20 per week? I rarely ever buy those more expensive vegetables and I’m still closer to £50 per week for a family of 4. I’d love to see a weekly menu and shopping list to really find out how I can save so much money.
