Cream of Celery soup is a new favourite for me. I received 2 lots of Celery in my shopping and thought "What am I going to use all this for?" and Soup was an easy option. This is as filling as it is tasty, and really nice cold too, so would be a lovely change on a warm summer day. Its also low in calories and packed full of vitamins, so whats not to likely? Prep:- Wash and chop the Celery.
Chop the Onions.
Shred the Spinach
Heat the butter in a pan on a low / med heat.
Add the onions and fry till soft (4-5mns)
Add the Garlic paste and stir through.
Add the Celery and stir through for 2-3mns.
Add the flour and stir through for 1-2mins
Add the Chicken Stock. Stirring continuesly till the flour has dissolved and there's no lumps.
Add the Chives,Sugar,Salt & Pepper and stir through
Add the Milk.
Bring to the boil then lower the heat and simmer for 12-15mns or until the Celery is soft.
Add the Spinach.
Add the Cream Cheese.
Stir through. Taste and adjust the seasoning if needed.
Stir through.
Use a stick blender to blend until smooth.
Serve hot with a garnish of pepper and spinach.
Easy Swaps:-
Light Cream Cheese for regular or Double Cream
Flour for Potatoes or Oats.
Spinach for Coriander or Parsley.
Chicken stock for Vegetable.
