Warming and comforting winter soup. My daughter's favourite.
Fry chicken breasts,remove and set aside till cooled then shred or chop into small pieces
Fry onion gently for 3-4 mins
Add crushed garlic
Add carrots
Add boiling water and stock cubes, stir until dissolved
Simmer gently for 15-20 mns
In a bowl add cornflour and stir in some milk till it's smooth
Add the remaining milk and sour cream, mix well
Add mix to stock stirring till blended
Add shredded chicken
Simmer gently for a further 5-10 mns,stirring continuously until thickened
Add salt,pepper and chives and stir
Serve with crusty bread if desired
