Creamy Sausage and Leek Bake

A comforting cheap dinner dish

 6 Sausages
 2 Leeks chopped
 60 g Cream cheese(I used garlic and herb)
 2 tsp Lazy garlic or chopped garlic
 100 g Grated mature cheddar
 2 tbsp Breadcrumbs
 1 tbsp Chopped chives
 1 tbsp Oil
 50 g Butter
 100 ml Vegetable stock
 1 tsp English mustard
 1 pinch S&P

Add half the oil and butter to a frying pan along with the leeks and garlic and fry on a low heat till soft then set aside

Use the remaining oil and butter and fry the sausages for 5 mns till they have some colour

Remove from the heat and slice them into chunks

Put back on the heat and add the stock and simmer for 10mns- this will deglaze the pan so you keep all the goodness inside

Add the leeks and stir

Add half the grated cheese cream cheese.chives and mustard and stir to combine everything. Season with S&P if needed.

Remove from the heat and cover with the remaining cheese and the breadcrumbs.

Place under the grill for 3-4 mns till cheese is melted and golden brown

Serve with roast potatoes and peas or mash potatoes and green beans or mixed veg.
Tip- if you need to loosen up the sauce then add more stock or a spot of milk.

  1. Made this tonight didn’t have vegetable stock so used chicken instead and mixed herbs instead of chives was lovely although next time I think I will add in extra veg and cook it as a hotpot. Easy recipe and so many things you can add or take away 😀

  2. Absolutely gorgeous. I added a bit of milk to pan when finished so had a sauce too. Made with veggie sausages. Can’t wait to make again
