Crispy Pancakes

A childhood favourite for many

Ingredients

Leftover bolognese , curry or sausage and beans or chicken and sweetcorn
100 g Plain flour
2 Eggs
300 ml Milk
1 tbsp Oil
TO COAT
2 Eggs beaten
Breadcrumbs
Oil to cook the pancakes

Directions

Put the flour in a bowl with some salt and pepper

Add the eggs , milk and oil . Whisk until you have a smooth batter

Heat a little oil in a small frying pan .
Add a ladleful of batter and cook until you can see bubbles forming.
Toss or turn it over an cook the other side

Repeat until you’ve used all the mix . Stack the pancakes between greaseproof papee

When the pancakes have cooled . Heat the oven to 190c

Put a good spoonful of cold filling on one half of the pancake

Brush the edges of the pancake with egg . Fold the other half of pancake over and seal

Dip the filled pancakes in beaten egg , then in the breadcrumbs to coat .

Sit on a baking tray. Cook for 15-20 minutes until crispy

You could fry these for 5 minutes either side

You can use any filling you like so why not experiment
