Double Chocolate Muffins

So easy - so tasty !

 140g plain chocolate-broken
 375g self-raising flour
 1 tblspn baking powder
 55g cocoa powder
 85g caster sugar
 2 eggs
 1-2 tspns vanilla extract
 6 tblspns sunflower oil
 375ml milk
 140g white chocolate chips or cut up

Preheat oven to 200c

Put muffin cases into muffin tins

Melt plain chocolate over simmering water, stirring constantly until smooth. Do NOT let the water boil or touch the bowl

Let it cool a little

Sieve the flour, baking powder and cocoa into a bowl and stir through sugar.

In another bowl, beat together eggs, vanilla, oil and milk.

Stir in the melted chocolate.

Fold this into the dry mix then fold through the white chocolate . Being careful not to overmix

Fill muffin cases with batter and bake for 20 to 25 minutes or until well risen.

Remove from oven and put on a rack to cool
