EGYPTIAN BUTTER COOKIES

My friends husband is Egyptian and he said these taste like the nearest thing to the cookies his Auntie used to make!

 175 g unsalted butter
 100 g caster sugar
 250 g plain white flour
 50 g flaked almonds

Cream the butter and sugar until smooth

Gradually mix the flour in until combined

Roll into walnut sized balls and then flatten slightly

Put on a lined baking tray and top with a couple of flaked almonds

Bake in a preheated oven at 160c or GM4 for 20 - 25 minutes

They will come out the oven still very pale and extremely fragile

Leave them on the baking tray for at least an hour

You can sprinkle them with icing sugar if you want
