Empire Biscuits
Ingredients
6 oz Plain Flour
6 oz Butter
2 oz Icing Sugar
2 oz Cornflour
Jam (raspberry or strawberry)
Glacé icing
Directions
Heat oven to 180c
Put all Ingres except jam and glacé icing into a bowl . Mix with an electric whisk until just combined
Roll out on a floured surface . Cut 24 round discs. Rerolling as needed.
Put on a baking sheet and bake for about 10 minutes . Cool on a wire rack
When completely cooled sandwich with the jam.
Ice the tops and finish with a glacé cherry
